Vegetable Fritata
So today I did not know what to do for lunch. I had lots of vegetables that need it to be used so somehow I figured a vegetable fritata would be perfect. I have not made one in a long time. It takes not longer than 20 minutes, it is versatile, since you can add any vegetables you may like and it feeds a few people :-)
You can make this and serve it as an appetizer by cutting it into small pieces as well, just another though.

Vegetable Fritata
Miryam's original recipe
Yield: 6 servings
Ingredients:
1 red onion, sliced
2 - 3 cups mushrooms
2 medium red peppers, sliced
3 - 4 tablespoons olive oil
6 eggs, organic
1/4 cup egg beaters, You can use all whole eggs if you prefer, just add a couple more eggs
2 - 3 garlic cloves, minced
1/4 cup sharp cheddar cheese
Salt to taste
Directions:
Heat oil in a skillet and saute the peppers, onions and mushrooms for about 5- 7 minutes. Add the garlic and cook for another 2 minutes. In a separate bowl, beat the eggs and egg beaters.
Add the beaten egg and pour over the vegetables. (the mushrooms tend to give off some water so before I add the egg mixture and pour some of that liquid out). Turn the stove to the lowest setting. Let the egg just set, about 8 - 10 minutes. Add cheese over the top and put under the broil for about 3 - 5 minutes until egg is set and cheese is melted.
Cut in slices and serve with some salad.

Tried this today instead of our usual scrambled eggs when we had company for brunch. Delicious, easier than scrambled eggs, and so nice to serve in slices, like quiche without the crust. I will make this for dinners too, great way to get veggies used up and into the kids.
