The best creamy avocado pasta ever and a giveaway!
I love avocados and this creamy avocado pasta has become one of my ultimate favorite avocado dishes.
I have been wanting to make something like this for ages. I think for months really. I have a to do baking and cooking list that goes on for ever and getting to each recipe takes a while.
I have seen many different versions of this creamy avocado pasta and while they are all good I thought of making my own.
The verdict for this creamy avocado pasta is just unbelievable. Not only this one was easy to put together but it was super tasty. Granted this dish had quite a bit of cream, but it is not like I eat heavy cream every day or even every week. There comes a time when dishes with a little bit of extra fat and such become part of our meals, and that is just perfectly OK.
For this recipe you can use basil in place of parsley if you like, which is what I will use next time. I am also going to add some chopped fresh spinach as well. I just didn’t have any on hand the day off.
Here you can see the before and after of the avocado creamy sauce. Just place all of the necessary ingredients in the food processor and pulse until smooth.

The best creamy avocado pasta ever!
Miryam's original recipe
Yield: 4-5 servings
Total Time: 15-20 minutes
Ingredients:
- 1 lb whole wheat spaghetti
- 4 ripe avocados, pitted and scooped
- 1 cup Parmesan cheese, skip for a vegan version
- 1/2 cup heavy cream, or coconut milk
- 1/2 cup fresh parsley, I used more
- 2 Tbsp extra virgin olive oil
- 1/2 tsp Celtic salt
- 1 lemon, juiced
- 3 garlic cloves, peeled
Directions:
Cook pasta according to package instructions.
In a food processor, combine avocado, heavy cream, Parmesan cheese, lemon juice, garlic, olive oil, parsley and salt. Blend until smooth and creamy. If you like a more creamy sauce you can add more heavy cream if you like. I do. Set aside.
When pasta is cooked through add the pasta to a large pot or bowl and add the creamy avocado sauce to it. Mix through until the pasta is well coated. Serve immediately with additional grated Parmesan cheese if desired.

Me encantan todas tus recetas!!
Lo que sí, una duda que me surge. En muchas de tus recetas de repostería usas aceite de coco, pero he visto por varias webs que no es tan sano como ponen porque creo que decían que tiene muchas grasas saturadas y no sé si los usas en vez del de oliva porque el sabor de este ultimo es mas fuerte o no sé.

El sorteo ya paso :-) El aceite de coco tiene un componente q hace q se metabolize en el cuerpo differente q las grasas saturadas normales por lo tanto es differente. No es igual q las grasas saturadas normales. Tiene q ver con su composicion quimica con unos “bonds” q se llaman MTC en ingles. No se como se dice en espanol :-)
