Double Chocolate, Walnut and Flax Cookies 2
Last week I made these awesome Chocolate Chip and Cranberry Flax Cookies and because the batter was so versatile, and because we loved them so much, I figured I had to try other combinations soon, so today I did.
This combination was also superb. One of my followers actually tried a very similar version and she loved it, I am glad she did!
For this version I used dark chocolate powder, walnuts and chocolate chips. I actually can’t decide which cookie I liked best, this of the one I made last week. They both were equally good.

These two pictures depict before and after baking the cookies for about 14 minutes. These are out of this world. The dark chocolate cocoa powder gave them an awesome chocolate flavor!
Double Chocolate, Walnut and Flax Cookies 2
Yield: 14-16 cookies
Ingredients:
1/2 cup whole wheat pastry flour
1/4 cup flax seed meal
1/2 cup oats
1/4 cup dark cocoa powder
1 teaspoon baking soda
1/4 cup olive oil, or coconut oil
2/3 cup unrefined sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup walnuts, chopped
1/2 cup dark chocolate chips
Directions:
Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.
In a medium bowl whisk oil, sugar, egg and vanilla. Add flour, flax, oats, baking soda, chocolate chips and walnuts and combine. I do this step simply with my rubber spatula.
Drop rounded scoops onto a lined cookie sheet and bake for 10 to 14 minutes. I pat them down slightly
Cool in the cookie sheet for 1-2 minutes and transfer to a wire rack to cool completely.

Hey, that’s me! How cool. :) Anyway, everyone make these cookies! They’re the best healthy cookies EVER. I’m sure they’d be delicious with whatever flavor chip you want to use.
I just made these…amazing! I wanted to eat the dough alone! I used butter, 1/2 cup each of pecan, dark choc chips and dried cherries. Thanks for the tasty recipe!

Okay…I have to admit I have never used or tasted flax seed. What kind of flavor does it give? These sound incredible, I’m just not sure about the flax seed. What about substituting wheat germ? (I don’t mind that and I have it on hand).
(btw…I finally have an oven again and stocked up on WW pastry flour the other day so I’m all set to bake all the recipes I have bookmarked from your blog! :) Yay!)

good to see you back and I am glad you got your oven back as well :-) I don’t know what would I have done without one.
Anyhow, I believe you can definitely use wheat germ. Flax seed meal is pretty much the same thing as wheat germ, as far as taste and appearance is concern. Flax seed meal contains the healthy fats such omega 3’s, anti-inflammatory properties but go ahead with the wheat germ if you can’t get the flax seed meal.
Let me know how the other goddies turn out if you do try them.

I used a gluten free flour blend, so the dough was a bit crumbly, but I added an additional egg and they came out great! Next time I am going to use pistachios for the nuts.
