Avocado mint cream bars
Holly molly these avocado mint cream bars are sensational. I can’t get enough of them. Not only they taste amazing but they are gluten free, vegan and healthy.
I made this avocado mint cream bars, which were extremely easy to put together. I have found a few pointers that may help you with the recipe.
- Depending on the dates you use, you may need to soak them. My dates where quite dry so I just added 2 tbsp to the crust ingredients when pulsing in my food processor. That help the crust ingredients come together. You don’t necessarily have to do this but because my dates where dried I had to.
- If using bananas keep the bars in the freezer. Just thaw them out about 20-30 minutes before serving.
There is not much I can say about these avocado mint cream bars. I truly love avocados and this is the perfect dessert for me. Even if you don’t like avocados I think you will love it. My four year old couldn’t get enough.

Place the crust ingredients in your food processor and pulse until it comes together.
With a spatula, press the crust ingredients evenly into a 8×8 square baking pan previously lined with parchment paper.
Pour the filling over the crust and evenly spread all over the crust. Freeze while you prepare the topping.
Avocado mint cream bars
Yield: 14 bars
Total Time: 20 minutes max!
Ingredients:
Crust
- 1 cup raw almonds
- 1 cup pitted dates
- 1 tbs cacao powder
Filling
- 1 avocado, pitted and peeled
- 3 tbsp coconut oil, melted
- 3-4 tbsp maple syrup
- 1 banana
- 1/2 tsp vanilla extract
- 5-10 drops peppermint oil, I used peppermint extract
- Pinch of salt, optional, I used celtic salt
Topping
- 3 tbsp cacao powder
- 3 tbsp coconut oil, melted
- 2 tbsp maple syrup
Directions:
Place the crust ingredients in your food processor and pulse until combine or the mixture is coming together like in the picture. With a spatula press evenly into the bottom of a 8x8-inch square baking pan previously lined with unbleached parchment paper.
Blend the filling ingredients in the food processor until smooth and spread evenly over the crust. Freeze while you prepare the topping. In a small bowl mix the topping ingredients and pour over the middle layer making sure to spread it evenly.
Freeze bars until firm. To serve let the bars thaw at room temperature for 20-30 minutes and cut as desired.

Due to food allergies and sensitivities, I’m now a gluten-free, dairy-free mostly vegan (fish and eggs still work for me). Family gatherings are hard, as I have no idea what to make for desserts, now that I can’t use cream and butter! This book would be super helpful with keeping me on track, and hopefully educating my family on how to be a happy mostly vegan. :)

I feel bummed that I missed the deadline to enter for this raw vegan cookbook giveaway. I hope I can still have the chance to win this. I’ve been vegetarian for about a couple years and just recently in the past year, with the help of my trainer bf I learned how to eat healthy. Not only I’m lactose intolerant, but I also have chronic asthma, so I have to cut dairy from my diet. I’m doing my best to be vegan & eat healthy, but unfortunately I’m not very creative when it comes to cooking. You actually should keep them in the freezer, or at least that is what I do. I am sure you can keep them in the fridge too though. I would say in the freezer they would last longer but if you keep them in the fridge I would say at least 4-5 days. I hope this helps :-)

I made these and they were delicious. I kept them in the freezer but when I put them out to be eaten the filling became very soft very quickly and I was wondering what I could use to keep it more solid as they became hard to handle. Thanks.
You could probably add some coconut butter instead of the oil since it is thicker, other than that I can’t think of anything else. Sorry!!
How do you prevent the avocado from turning black?
I have never had that problem but you can add some lime or lemon juice to it :-)
I made these today and they taste delicious but the center did not firm up so when I cut them the center spread out. It still taste delish but I was wondering if other people were having these problems? I put it in freezer for over an hour.
You need to leave them in the freezer for at least 3 hours to firm up before eating and then keep them there. Then you can just thaw them out for a few minutes before eating but for the most part you should keep them in the freezer :-) Thanks for stopping by.

I am not sure. I think the oil gives it a more mint flavor bc it seems concentrated but you can certainly try w/ the fresh mint. I have not idea how much you would have to use, sorry!

Question, someone was asking if there’s a way to leave out the almonds….I’d think the dates would become too mushy and wet without the almonds but wondering what you think…could something else go in with the dates for the crust, her husband has a nut allergy. I am thinking perhaps sunflower seeds or some seeds of some sort. Maybe a combo of them with some oat flour may work.
What could I use in place of the Banana?
Maybe avocado? However you may have to add more sweetener because the bananas are sweet and not the avocado!

I am not sure. Bananas are one of the main ingredients so I can’t think of any other ingredients that would work similarly!
These were sooo delicious! I didnt have maple syrup so I used date syrup instead. I didnt have enough filling so I had to make some extra to cover the crust. I think my avocado was smaller than yours maybe? Regardless, they turned out amazing. They tasted like mint ice cream sandwiches. Thanks for the recipe!
I doubled the banana (2 bananas) and tripled the topping recipe. Turned out IMPECCABLE. My friends were dying.
