Yesterday, I was able to make another salad. So far, every salad that I have made has been a winner but this bulgur bean salad with goji tahini dressing was just out of this world. I am just obsess with the dressing.
Lately, I have been wanting to incorporate more goji berries into my diet. After all, these are nutritional powerhouses. If you haven’t try them before this would be the perfect recipe to do so.
I got two huge tahini containers a couple of weeks back as well so mixing them both I thought would make a great base for any salad dressing.
I use sesame seeds on a regular basis but Tahini, well, yesterday was my first time using it and I was in love. This salad dressing is going to be one of my regular to go salad recipes. I am so obsess with it.
Do you have a salad dressing that you love? It is so easy to make your own salad dressings. This one take an extra minute or two but literally you can have the best tasting salad dressing in under 5 minutes.
If you are like me and love veggies, you will love this bulgur bean salad with goji tahini dressing. If you must have a gluten free version you can use quinoa instead and if you want a vegan version you can use maple syrup for the dressing.
As far as the legumes and veggies, you can really any of your choice. Salads are very versatile very versatile so anything goes really.

Yield: 4 servings
Total Time: 15 minutes
Dressing
Cook the bulgur according to package directions.
On the meantime, soak the goji berries in hot water for 5 minutes. Discard the water.
Add all the dressing ingredients to you blender or hand blender and blend until you obtain a homogenous mixture.
Divide salad ingredients between 4 bowls. Divide salad dressing between the four bowls and combine. Serve salad immediately.
NOTE: You may have some salad dressing leftover. The recipe makes a bit more for future salads.
