Lemon and coconut popsicles
This lemon and coconut popsicles are the bomb. Refreshing, healthy and just super tasty.
I have been making the weirdst most awesome combinations. This lemon and coconut popsicles are not weird but just fantastic. Can you believe I used turmeric to colored them? I think it is just genius because not only these lemon and coconut popsicles are healthy but the turmeric makes them extra healthy.
Turmeric is a potent antioxidant so using it for a sweet treat I think it is awesome. It is tasteless so don’t be worry about getting any weird flavor from it. I mostly use it for my Indian cooking but now I think I am going to start using it for many of my sweet creations, especially when it comes to lemon flavors.
On another note, today was my first day back to university after almost 9 years. I was really eguered to start but I think summer school is going to kick my behind. I have taken the maximum amount of classes I could have taken and even at registration the clerks where looking at me as though I had two heads. After all, I am taking all science courses but I hope I can handle it because it is costing me a pretty penny.
Well I leave you with these sensational lemon and coconut popsicles that I hope you get to make soon. I love my popsicle mold so I think I will be getting another soon since frozen popsicles pretty much don’t last that long at in my house.

Lemon and coconut popsicles
Miryam's original recipe
Yield: 12 popsicles
Total Time: 10 minutes
Ingredients:
- 1 15 oz coconut cream
- 1/2 cup almond milk
- 1/2 cup unsweetened shredded coconut
- Juice of 2 lemons
- 2 tsp turmeric
Directions:
In your blender place all the ingredients. Pulse until smooth. Divide mixture in your popsicle mold and freeze until harden.

Whenever I have a race coming up, I load up on turmeric for it’s anti-inflammatory properties. Works every time! These popsicles sound awesome!
I love the vibrant color, adding the turmeric was a brilliant idea especially in the summer, it is known to help with seasonal allergies!
Found they were very chalky tasting…. Not like a Popsicle at all.

If you like you can add more lemon juice as well as more coconut cream to dilute the turmeric tasting. Sorry they weren’t of your liking :-(
