Once again, super easy to make. It will not take more than 10 minutes to put together before placing in the oven. I am wanting to incorporate more fresh fruits into my baking and I thought this to be an easy way of doing it. With the summer just around the corner and with the warm weather, I always feel like eating more fruits. I hope you try this cake because for sure it isn’t going to disappoint.
Miryam's original recipe
Yield: 8-10 servings
1 cup of whole wheat pastry flour
1/2 cup barley flour, you can use oat flour as well or just all whole wheat pastry flour instead
1 egg
1/3 cup olive oil
3/4 cup low fat milk
2/3 cup sugar (maple syrup will work as well and it is better for you
1 tablespoon lemon zest
1 tablespoon of vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup wild berries
1/2 cup fresh strawberries
Preheat oven to 350 F. In a bowl whisk egg, oil, sugar, milk, vanilla, and lemon zest. Add flours, baking powder and baking soda. Mix until combined. Pour over a previously greased and floured 9 inch pan. Top with wild berries and sliced strawberries. Sprinkle cake with one tablespoon of sugar if you like. Bake for 35-40 minutes. Cool in pan for about 15-20 minutes before transferring to a wire rack. Enjoy
